Calzone Tomato/Mushroom Filling

Filling for 6 calzone

1 - 28 oz can whole peeled tomatoes

8 oz sliced fresh mushrooms

1 medium green pepper

1 cup grated Romano cheese

1 tsp oregano leaves

½ tsp thyme leaves

2 – 3 TBS olive oil

Slice canned tomatoes and allow slices to drain in a strainer. Chop green pepper into ½ inch squares and sauté with sliced mushrooms in olive oil with oregano and thyme leaves until tender. Allow sautéed ingredients to drain in strainer. Combine mushroom/pepper mixture and tomatoes in bowl and toss with cheese and salt and pepper to taste.
