Lemon/Lime Salad Dressing
Makes 1 2/3 cups salad dressing

This is a wonderful fresh, light dressing that can be used in tossed fresh green salads as well as marinated bean and grain salads. It’s very refreshing in the summer and a welcome zing to any winter menu. This dressing is slightly on the sweet side so it’s perfect for those friends that don’t like too much vinegar.

½ cup extra virgin olive oil

½ cup canola oil

Juice of 2 limes and 1 lemon (or enough to equal ½ cup of juice)

5 TBS honey

1 tsp seasoned salt

1 tsp granulated onion

2-3 dashes hot sauce

Combine ½ cup lemon/lime juice, honey, salt, granulated onion, and hot sauce. Whisk until honey is dissolved. Add oils and whisk until emulsified. Dressing may be used immediately or refrigerated.
